I'd say Coopers. I'm running Ridge Grapplers now and I'm not a fan. I had Cooper AT3s on my last truck and they threw rocks like crazy. The Nittos do, too, but not as bad.
I'm extremely glad they went back to steel pistons.
And it definitely sounds like your truck is a candidate for the reflash. Mine hauls a 14k 5th wheel (F250 CCLB) with ease, I love the engine brake, I even use it in 4x4 during slippery conditions so I don't have to ride the brakes.

I definitely wish I had my old 7.3L sometimes. I definitely miss not having a payment. But alas rust got it. I do like the aluminum aspect of these new trucks a lot. All the EPA bullshit and sensors/trackers.... notsomuch.
I can't remember specifically, but there are 2 different stud lengths, and I think the difference is whether the truck had alloy or steel wheels.
