Very High Oil Temps?
Your oil cooler could be stopped up from mixing coolants..... you may want to pull it off and put new orings on it after making sure all the tubes are fine (coolant flows through the center). -

Anyone personally tuning their 6 liter?
There is a steep learning curve to diesel tuning. I'm still learning..... I had a 6.0 truck with a procharger and 175% nozzles on hybrid injectors on the dyno the other day. Upgraded Cam?
the shims are determined by how much you need to get back to stock installed height and how much lift the cam has. My stage 1 cam has more lift than stock, so you really can't shim the 910s any tighter than .030 less than stock installed height or you will fatigue the springs prematurely or you...- Gearhead
