Abnormal OIL temp, not coolant

got a code for coolant thermostat and gauge didn't work and my oil temp was roughly in the 150s-170s, as well with coolant. New thermostat it averages mid 190s for oil and coolant (Using cat coolant, when refilled I was half gallon or so short on coolant so I used water). and every once in awhile it'll peak up to 201 for oil temp and coolant stay in the 190s. Noticed it was 3 quarts low on oil within 3800 miles and sometimes at idle will haze blue and burn oil. That is most likely my turbo seals, but am wondering about my oil temp being over 200. Any help? Thanks guys. List of mods are below!

200 degree oil temp is nothing to worry about. As long as the oil is within 10-15 degrees of the coolant you should be fine.
