with the h&s can you read the pyro in the block off plate as well as the stock egt1 sensor?
i would like to see what the difference is between those two readings.

from my 7.3l experience you dont want to go above 1250 for very long. not sure how that translates to the 6.7l yet.
as for the noise between shifts...it sounds normal to me. i used to have a manual trans and you could hear this noise on every shift. its just excess pressure coming back out...
so maybe they are not far off then.....maybe 50-100* cooler at the EGT1 compared to pre-turbo.....at least while cruising empty and at idle. the highest i have seen my EGT1 while towing is maybe ~1250. 1625 sounds scary high to me
