Replace all the rubber gaskets that hold the fuel lines, because they will leak, and replace the o rings on the fuel bowl drain, probably need o rings on the turbo pedestal (both top and bottom), change fuel filters, do the in tank mods, change the oil and air filters. Vioala, you should have the base for a reliable, new to you 7.3. There are several other things too. But thats where I like to start.
