I don't tow with it.... so they are actually rated for the weight of the truck .... not with that and the intended use for the truck.... add that with the low profile of the tire... and you end up taking bumps very gingerly....
I would look more at your low coolant temps.... 190-198 is great for oil temp.... it's when your coolant is at 195... and you eot is at 225 that you have a problem ....

seriously op.... I wouldn't go any lower on your aspect ratio ... me and Jeff run the same size tires..... I think I go through 3-4 a year just from hitting pot holes..... couldn't see it getting any better going up in rim size....
Aside from that trash programmer.... sounds like a great way to go with a 2wd..... may have a bit of a biased opinion though..... you looking to lay frame or just get a lowered stance?!?!?!

I would also be taking g a good hard look at the harness/plug connector...... especially Iif the problem stays in the hole....
Also. .. have you tried swapping in a known good working ficm?!?!? See if it has the same problems....
Probably check for boost /exhaust leaks... fuel pressure....hook up a scanner and check all the usual suspects ....

I would Def check that fuel pressure..... shouldn't be running through injectors like that.... Also. ... may wanna look into a ficm tune.... might have one of those really great flashes ford came up with that was bad about killing injectors....
