Through an unfortunate series of events I've ended up with 4.10s in my 99.5 F250. I'm finding myself driving a lot of highway miles. Has anybody been able to fit 285/75/16 tires on a 2wd. I'm due for tires in a couple months and I think this route would be easier/less expensive than finding someone to install my old 3.73s. I've set up rearends before, just don't feel comfortable doing a daily driver.

You should be just fine with the 285/75R16s, especially if you mount them on stock wheels. I am currently running 285/55R20s, which are only slightly shorter than 285/75R16, and I am slightly lowered with plenty of clearance. I have been pondering leveling my truck though and going to either 33x12.5 or 305/55R20.
