My problem is when I crank the airdog all the way in then turn the screw back 1 to 1 1/2 turns it still shows 15 -20 psi at the regulator and after the truck warms up the gauge bounces all over as if there is air in the system ??

Where's your gauge at? On the fuel block?

Ditch the airdog and buy an a1000 or fuel lab, a water seperator/filter block and use the single regulator to regulate it. From what ive heard you turn the ad up all the way and regulate using the regulator on the block, typically 10psi like mentioned above
