Sooo.... I took a few of the e series oil filter housings and adapters in and got them machined to accept brass fittings so that I can do soft lines versus the hard steel lines....does any one know what kind of pressure rating should be on the lines for the oil?

Well a cold truck can easily overcome the regulator, which is around 75 psi. A cold truck throttled can make 125 psi.
Any decent hose can handle this. It's everything else that you need to make sure of, ie hose end connections, temp, etc.
Use a high temp line, rated for at least 250 degrees. Preferrebly synthetic inner tube.
I wouldn't use a socket less hose end. Or socketless hose for that matter. Any brand, any style socketless will in time not do so well.
I use aeroquip fc699 for anything oil or fuel related on under hood, except for hydraulic systems.
If you just look at hose specs for instance aeroquip socketless fc332 sounds good for your oil system. In reality it will break down, the exterior cover will crack from underwood heat, and the inner layer will deteriate.

Pfte hose works excellent for oil lines, just remember that it is measured like tube.
Example, a 3/8 line is really 5/16 Id, not 3/8 like a typical 3/8 line.
I don't use anything smaller than -12, or 3/4 for low side oil lines. The 7.3/ 6.0 engine oil pumps can flow alot, at governed speed roughly 20gpm.
Aeroquip fc807 would never fail or breakdown from heat cycles or under hood heat.
It's just pricey.
